Butternut Squash and Bean Tacos!

Sounds crazy! But, it's Jazzi's Taco Day, so let's DO IT!

Chopping up the ingredients.....

I grew that squash in MY garden!

Here is what Mom's plate looked like:

Butternut Squash, Black Beans, Onion, Goat Cheese, Cilantro and Lime on a steamed Corn Tortilla.

Here is what a squash taco for a dog looks like:

Cooked Butternut Squash, crumbled Goat Cheese and a Tortilla Chip, with a sprig of Parsley.
