Every couple of days now, we harvest around 70 lbs of tomatoes...

Dad is busy making roasted tomato soup.
He cuts 4 pounds of tomatoes in quarters, puts them on a roasting pan with 12 cloves of peeled garlic, 1/4 cup of EVOO (olive oil), 1/4 cup balsamic vinegar, salt and pepper. Then he roasts it in the 500 degree oven for 35 minutes. Meanwhile in a large saucepan, he puts 1/4 cup EVOO, 1 chopped yellow onion and some salt and cooks for 8-10 minutes until the onions are soft. He adds 2 cups of basil leaves and cooks for one more minute. When the tomatoes are slightly cooled from the oven, he adds them to the onion in the saucepan with 2 cups of cold water and cooks for 10 minutes. Add more salt and pepper to taste. Then he purees the tomato mixture in a blender, starting on a slow speed until the mixture is smooth.
This makes 8 cups of the best tomato soup you will ever have!
We freeze it in Tupperware and enjoy it with grilled cheese sandwiches in the winter!
I steal help myself, to at least one tomato per day...
I take it under the Pieris bush, where I keep all my treasures.

OH I just love tomatoes too! I like the grape or cherry tomatoes cause they are just my size!

ReplyDeleteI was wondering... why doesn't your dad CAN his tomato soup? I don't have enough freezer space... so I CAN everythingy Possible... I think it would only take 15 mins. in a hot water bath to do the job. My mom always furgets to THAW stuffs.. so canning helps with that one too.. I'm just sayin.
I'll bet you are right about that being Delicious Tomato Soup... add a grilled cheese sammich and ... HEAVEN.

ReplyDeleteThat's a bumper crop alright - my mum would be happy with one big bowl (our veggie garden is postage stamp size) and we are thinking of getting our seedlings for this season now.
Mum is also going to grow zucchinis for the first time this year - paws crossed it will work!

One of the reasons I don't grow tomatoes: I have no idea what I would do with them all!
ReplyDeleteA suggestion I read on another blog today is to slice them and dehydrate them using a food dehydrator. Then you can store them and use them in dishes all winter long.

ReplyDeleteI remember how many tomatoes you planted! Love the harvesting of them too--I've made a tomato sauce with carrots, onion, sweet & hot peppers and maybe celery if I have it. Cook it for a bit and then use the immersion blender on it. I freeze the sauce for winter enjoyment.
