We were skeptical of green eggs and ham...
Why is it green? Does it taste like Spam?
Our protein source is not usually green.
This is the most unusual dish we have ever seen.
We think that presentation is the KEY.
Follow our recipe and you will SEE.
Green Eggs and Ham is Delicious, WE SAY!

Wyatt's Green Eggs and Ham
Ingredients:
6 hard boiled eggs, 1 cup watercress chopped, 1/4 cup light mayonnaise, 2 tablespoons scallions chopped, 2 tablespoons tarragon chopped, salt and pepper, 4-6 slices of baked ham-thin sliced.
Instructions:
Once eggs are hard boiled, cooled and peeled, cut in half and place yolk only in food processor. Add mayonnaise, watercress, scallions and tarragon. Process until smooth and creamy. Salt and pepper to taste.
Roll and place ham in each egg half. We suggest placing a tad of the yolk mixture in the egg first (just a tad) to hold down the ham. Gently press ham and fill with desired amount of yolk mixture.
Serve immediately or chill for 1-2 hours before serving!
Avocado, Basil and Chives work too.
Just look for veg, with a green hue.
