Ryker's Fresh Apple Cake

Yum Yum Yum!
This was really good. We can't wait til our apples are ripe and we will make this recipe again. Thanks Ryker!

Fresh Apple Cake

3 large eggs
2 cups sugar
 2 tsp. vanilla
1 1/2 cups vegetable oil
1/2 tsp. cinnamon
2 tsp. salt
1 tsp. baking soda
3 cups all purpose flour
3 cups diced apples
1 cup chopped walnuts

Preheat oven to 325 F, spray pan with Pam for baking or grease and flour Bundt pan.
Mix oil, eggs, sugar and vanilla until blended. Stir into dry mixture. Add apples and nuts. Pour batter into pan. Cook for 90 minutes.

Sauce for cake:
Combine 1 cup light brown sugar, one stick butter, 1/8 tsp. salt and 2 tablespoons milk. Heat and stir for 5 minutes, but do not bring to a boil. Serve warm over cake. Cake is very good with or without the sauce.

  6. This really does sound so good. Mom can't wait for the new crop apples to arrive here. Everything we get in the store tastes horrible. We hope there is a good crop this year.
