Meatless Monday

Stanzie is worried......
We are not going vegetarian, (not that there is anything wrong with that). We still like meat. Very, Very Much. But, we do love our veg and we grow a lot of veg. So, we have decided to celebrate veggies, and go meatless one day a week!


Okay, I have to admit, Dad, Stanzie and I were skeptical about 'Meatless Monday'. But Mom made this super yummy 'Portobello Medallions au Poivre', for Dad (Courtesy of Rachel Ray Magazine). She served it with brown rice and asparagus. Dad licked his plate clean!
 Mom says: "It's not the prettiest thing we have ever made, but the flavors made up for that!"

Stanzie and I, had something called 'Doggy Vittles' from the cookbook, 'Real Food for Dogs'.


Preheat oven to 350 F.
Combined these ingredients in a large bowl and blend thoroughly:


1 cup cooked rice
2/3 cup grated cheese
1/2 cup finely chopped carrots
1/2 cup finely chopped zucchini
1/3 cup applesauce
1 egg beaten
1 tablespoon brewer's yeast

Pour the mix in a casserole dish and bake for 12-15 minutes.
Cool and serve. Store any leftovers in the refrigerator.....WHAT LEFTOVERS!!
OMD!! Stanzie and I, licked our bowls clean too!! I guess one day a week without meat, is not going to kill us. Keep it coming Mom!

  2. Oh yum, that actually sounds delicious! We too sometimes get "meatless meals" once in a while. We would just get brown rice, pumpkin, green veggies, potatoes & oats. We like it a lot!

  6. I think portobellos could make anything delish and no one would miss the meat! That recipe sounds great.

    Stumpy would be happy with egg and cheese every day!

  13. That looks fabulous!!!! I am going to have to try that!!! I am not a huge fan of meat... Well okay I am a liar... I grew up not really liking the texture of meat, this caused many fights with my parents who were constantly trying to get me to eat my chicken or fish (they weren't really red meat eaters), but after meeting my husband, he has helped me realize that I was missing out on fabulous things like steak!!!! But I still prefer veggie meals... So this looks amazing to me!!!! Thank you for sharing!!!!

    Wow, that sounds really yummy! Portabellos are supposed to be the best and I bet those dishes were clean enough to go right back into the cupboard...no dishwasher needed!

  21. We love portabello's!! We are up to TWo nights meatless a week!! We have cut way back on the portion size of the meat that we eat when we eat meat. I am ready to go meatless but Tom is not. He wants to ease into it!! So we are easing!! Your meal could have been better with oregano!! We use it every night and it gos in Bambi's food too!!

  32. This is awesome! Mom is a veggie head and Dad is mostly. We love our veggies, but we love meat too! These are some GREAT recipes! We'll be tuning in for more veggie recipes from you. Just keep 'em easy, okay? Mom's not that into cooking, but she LOVES to eat!
