Shopping around the World

Today, we are joining Bacon and The Canadian Cats in Shopping Around the World Hop!
This month's recipe and shopping spree is about FISH!
 
We shopped at 3 stores for our dinner:
Tony's Fish Market, Oregon City, Or.
Spicer Brother's Produce, Oregon City, Or.
Fred Meyer (Kroger), Oregon City, Or.
 
We will be making Fettuccine with Smoked Salmon.

Yeah, the low calorie cream cheese is on sale!

Never tried this before, but the recipe calls for 1 cup......
Any suggestions for the remaining 3 cups?

We bought the whole plant, so we can grow more for later!
Also, the clerk sold the plant for 1/2 price because it looked scraggly, but our green paws can fix that!

Fettuccine with Smoked Salmon                            Cost  

6 ounces fettuccine                                                 .88
1 cup clam-tomato juice                                         2.89
1/2 cup chicken broth or dry white wine                  .96
1 red onion, finely chopped                                      .52
2 tomatoes, peeled, seeded and chopped               1.21
1/4 cup light cream cheese                                    2.29
2 tsp mixed peppercorns, bruised      
1/4 tsp salt
1/2 pound of smoked salmon                                6.50
2 tablespoons chopped fresh dill                          1.49        
                                                                  Total   $16.74

1. Cook the fettuccine according to package directions, drain and place in serving bowl.

2. In medium saucepan, combine the clam-tomato juice, broth or wine, and bring to boil. Add the onion, reduce the heat and simmer until soft about 3 minutes. Stir in the tomatoes, cream cheese, peppercorns and salt, cook stirring constantly, until well blended, about 2 minutes.

3. Sprinkle the flaked salmon over the fettuccine, add the sauce and toss to coat. Sprinkle with the dill and serve.

4 servings / Only 344 calories per serving!

This meal cost us $4.18 per serving to make. We also have left over ingredients such as Clamato, 1/2 box of fettuccine,  1/2 can of broth, cream cheese and one thriving Dill plant!

  2. Oh my stars!! Does that salmon look scrumptious or what? Mom is trying to get our printer to work so she can copy the recipe and try this fine recipe. It is definitely a Sunday meal. It looks beautiful too.

  3. That looks very yummy! Ghostwriter loves salmon (and so do I!) but not Dad. He's not a fish guy. He'll eat a tuna sandwich, though. Go figure!
