Spanish Lesson : Numero Dos

Quiero presentarie a Bandit? - May I introduce Bandit?

Perro de pastor -   Oh, sheep herding dog!

Please tell your mama, that she is a very good cook and our dad really loves these enchiladas! We are making them AGAIN this week!

Bandit's Enchiladas

Two 12-oz. jars of Trader Joe's Enchilada sauce (red)
3 cups of cubed cooked chicken, or cooked and drained hamburger
1 1/4 cups Pace Picante (I use medium heat)
1/2 cup chopped green onion
1/2 cup chopped yellow sweet onion
1/2 cup chopped red bell pepper
One 12 oz. bag of Trader Joe's Fancy Shredded "Mexican Blend" cheese
1 can of sliced or chopped black olives, drained
1 can of chopped green chiles
Minced garlic to taste (at least one clove worth)
3/4 teasp. salt
1/8 teasp. pepper
10 Flour tortillas, large burrito size
Shredded lettuce
Chopped tomatoes
Sour cream

*Optional : seeded and finely chopped jalapeno peppers

In a 4-quart saucepan combine the cooked and drained meat, Picante sauce, green onions, onion, red bell pepper, 1 1/2 cups shredded cheese, olives, green chiles, garlic, jalapenos*, and salt and pepper. Add 1 jar of the enchilada sauce, minus 2 tablespoons. Simmer uncovered over medium-low heat for about 20 minutes, stirring occasionally.

Spray a 13 x 9 inch pan with cooking spray. Then, cover the bottom of the pan with the reserved 2 tablespoons of enchilada sauce to coat the bottom of the pan.

Spoon about a 1/2 a cup of the meat mixture down the center of each tortilla. Roll up and place seam-side down, over the sauce in the pan , in one row.

Take the second jar of TJ enchilada sauce and pour evenly over the ten rolled tortillas.
Sprinkle the remainder of the shredded cheese over the top. Bake at 350 degrees for 20-30 minutes, or until thoroughly heated. Let stand 5 minutes. Garnish the top with lettuce, tomato and sour cream, etc.

Makes 10 servings

  4. OMD OMD... we are having MEXICAN FOODS this Weekend!!! This is a super recipe. I showed THIS one to mom and she wrote it all down. She had already planned to have Taco Salad and HER Spanish Rice.. with beefs in it. THESE will go grrrreat!!!
