Ingredients (4 portions)
12 corn tortillas
2 cups of cooked boneless breast chicken (shredded)
2 avocados (crushed)
1 cup of manchego cheese (grated)
1 cup sour cream
1 cup tomato puree
1 cup chicken stock
1 cup diced tomatoes
1 lettuce (julliane cut)
vegetable oil, salt and pepper
The preparation is very simple because you just put layers of ingredients.
Make a sauce with the tomato puree and chicken stock. Mix these 2 ingredients and cook for 10 minutes. Season with salt and pepper.
Fry the tortillas in oil.
On a plate, put the fried tortilla. Add a layer of crushed avocado, a layer of chicken, a layer of lettuce, diced tomato, tomato sauce and cheese. Repeat proceedure 3 times. When last layer is complete, add sour cream to the top. Put in microwave for 30 seconds to melt the cheese. Add hot sauce or tabasco to taste.
Can also be made in a pyrex dish and cut into individual portions, but Lorenza's family prefers individual portions for best presentation.

ReplyDeleteHey Wyatt... I'm thinkin' you should put all of these together and have one of those cookbooks made. The kind that some groups make and sell for green paper makers. You could donate all procedes to some grrreat charity for dawgs.
I know that my mom would buy 3 or 4. Think on it... If you decide to do that.. I think mom might have an address for a place to have them done!!!
