Take me to the River, Cook me up a Salmon

Drag mom into the water.....
Looking at a big stick....
Laying down to get a drink.
C'mon Stanzie, get yer paws wet!
Looking for the fishies...
Craving Fishies for dinner now...

Sugar's Grilled Salmon with Blueberry Sauce

4- 7oz. Salmon steaks or fillets with skin (each about 3/4" thick)
1 Tbsp. Olive Oil
Seasoning: Fish seasoning or simply use...Kosher salt, Black pepper, Allspice and 2 Tbsp. chopped mint leaves

1 cup of Blueberries
1 clove of garlic
1/4 cup of chopped or thinly sliced onions
2 Tbsp. Balsamic Vinegar
1 tsp. of chopped thyme
1/4 cup of water

Salmon: Brush the grill rack with oil. Season Salmon with the kosher salt, pepper, allspice. Grill the salmon 4-5 minutes per side.

Blueberry sauce: Heat a skillet with olive oil (medium heat). Saute the onoins, add garlic and some of the salt, pepper, allspice seasoning. Add blueberries, water, thyme and basalmic vinegar. (add the basalmic vinegar to your taste, so add 1 tbsp. first). Stir to blend, mashing the berries with a fork and cook until thickens. Remove from heat. Sauce can be made ahead and stored in the fridge, just reheat before putting on fish.

Smilin' for Salmon!

Lots of Golden Woofs from Sugar!
And Lots of Plate Licking Thanks, from Wyatt and family!
(This is what it looked like, when we made it....Yum!)
